my favorite chicken marinade

when ryan and i bought our condo 4 1/2 years ago, we were so proud of our 22- and 23-year-old selves.  we threw a housewarming party so we could show off everyone could see our first place. people were extremely generous and brought us housewarming gifts, and one gift was a cookbook titled barbecue nation. since then i’ve made a few things from the book, but i always go back to this one, my all time favorite chicken recipe.

soy sauce and dijon marinated chicken breasts

1/3 cup honey
1/3 cup dijon mustard
1/3 cup soy sauce
2 cloves garlic
six boneless, skinless chicken breasts halves

in a medium bowl, combine the honey, mustard, soy sauce and garlic. add the chicken and toss to coat. pour all the ingredients into a large ziplock bag and marinate for at least 30 minutes, though 4 hours is better (i’ve even done it all day). remove chicken breasts from the marinade and place on preheated grill. cook until cooked all the way through, about five minutes per side.

my recipe notes:
-when making only two chicken breasts for ryan and i, i mix less of the marinade, making sure to keep the amount even for the soy sauce, dijon and honey (maybe few tablespoons each), and add in a garlic clove. (sometimes i don’t even measure, but that’s only when i’m feeling rebellious.)
-i usually mix directly in the ziplock bag, eliminating a dirty dish
-if you run out of gas halfway through cooking (not like this happened to me or anything) or if you just don’t want to grill,  you can cook these in a pan on the stove (medium high heat, spray the pan or use a little oil, about 5 minutes on each side)
-if you want extra flavor (though it doesn’t need it), boil the leftover marinade for five minutes and serve over the chicken or as a dipping sauce

  1. Thanks for the recipe, I made it last night…delish! I simmered the rest of the marinade (added some water and 1/2 tablespoon butter) for at least 20 minutes and it reduced to a dark, thicker consistency and was awesome.

  2. I tried this marinade on some legs, it came out pretty good. I usually use a 2-1 ratio of regular french’s mustard and soy sauce, much more garlic, and cracked pepper (the pasty consistancy stays coated on the chicken much better as it’s grilling). The end result is bomb.
